Zucchini Bread

Ingredients:
3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini
3 tsp vanilla
3 cups flour
3 tsp cinnamon
1/2 cup chopped nuts
1 tsp soda
1/2 tsp baking pwdr

Preparation:
Beat eggs until foamy. Add oil, sugar, and zucchini (sqeeze out water, if any). Add vanilla; beat well. Mix and sift dry ingredients; mix until well blended. Add nuts. Bake in greased 9x5x2 inch loaf pan. Makes 4 small loaves. Bake at 325 degrees for 45 minutes to and hour depending on size of pan. Test with toothpick to see if done.
