Olive Garden Zuppa Tuscana
- 1/2 lb Italian Sausage – browned and drained
- 3 cups chicken broth
- 1 shredded Russet potato
- chopped Kale – whole head
- 1 cup heavy cream or half & half
Combine Italian Sausage, potato & chicken broth. Let simmer. Add 1 cup of cream and simmer…but don’t boil. About five minutes before serving, add Kale.(I also add extra red hot pepper sprinkles into the soup if the sausage isn’t very spicy. )Serve with breadsticks and green salad.
